The taste of Marsala wine is similar to white port or sherry, so any of the three will work in this Chicken in Mushroom Sauce. Fortified, barrel-aged wines like these add a deep, rich taste and light sweetness to recipes, and their higher alcohol content means they’ll last for ages.
Tip: You can replace the wine with ½ cup chicken stock plus the juice of half a lemon.

Serves: 4
Time: 30 minutes
Ingredients
- 1 shallot, minced
- 1 clove garlic, minced
- 1 tsp. + 2 tsp. + 1 Tbs. extra-virgin olive oil
- 4 pieces thin-sliced boneless, skinless chicken breast
- 6 oz. small mushrooms (any kind), quartered
- ½ cup dry or medium marsala wine (see headnote)
- 1 Tbs. flour
- 1 cup chicken stock (preferably homemade), more if needed
- ½ tsp. kosher salt
- freshly ground black pepper
Instructions
- In a small bowl, mix the shallot and garlic with 1 tsp. oil.
- In a large heavy pan over medium-high heat, heat 2 tsp. oil until shimmering. Sauté the chicken until lightly browned on one side, 2–3 minutes. Turn the chicken over and cook for 30 seconds. Remove from the pan.
- In the same pan, add the remaining 1 Tbs. oil. Sauté the mushrooms until lightly browned, 3–5 minutes. Remove from the pan with a slotted spoon, leaving as much oil behind as possible.
- Add the shallot-garlic mixture to the pan and cook, stirring, for 30 seconds. Stir in the marsala and let reduce by half.
- In a small bowl, whisk the flour with 2 Tbs. chicken stock. Add the remaining chicken stock, salt, and pepper to the pan, then whisk in the flour mixture. Simmer until the sauce thickens, 4-5 minutes, adding more stock if needed.
- Reduce the heat to low. Return the mushrooms and chicken, browned side up, with any juices to the pan. Gently simmer until warmed through, about 1 minute.
